450g dried lentils
1 (400g) tin chopped tomatoes, drained
1L beef stock
1 carrot, chopped
1 kg Polish sausage, cut into 1cm pieces
1 stick celery, chopped

Rinse lentils, but do not soak. In a slow cooker, stir together the lentils, tomatoes, stock, water, carrot, sausage and celery.
Cover, and cook on High for 3 hours, or Low for 6 to 7 hours. Stir well before serving.
Find Polish sausages, like Kabanos, at the supermarket or a Polish deli. If you can't find any Polish sausage, use a good pork sausage or fresh Spanish chorizo.
First time I cooked this on the stove top and halved the lentils(which I think would have been too much) increased the stock and threw in a few diced potatoes .Was amazing ,the best thing i've cooked so far.Must add though that it did four of us as a main meal and that was not a huge bowl so where the 12 !! comes from I dont know ...children?

Altered ingredient amounts.
we used normal pork sauages, but would next time brown them first for some colour. we missed out the celery as i dont like it. we also used red lentils as that was all we had. turned out lovely. - 28 Feb 2011
