About this recipe: A small banana is added to a basic made-from-scratch brownie for a hint of banana flavour. This is a fudgy brownie and it does not rise much. Add 60g chopped nuts or chocolate chips for more flavour. No mixer required!


Serves: 16 

  • 110g butter
  • 100g plain chocolate or chocolate chips
  • 1 large egg
  • 150g light brown soft sugar
  • 1 small ripe banana, mashed
  • 1/2 teaspoon vanilla extract
  • 100g plain flour

  1. Preheat an oven to 170 C / Gas mark 3. Grease a 20cm square tin.
  2. Melt butter in sauce pan over medium-low heat. Remove from heat, add chocolate, and stir until melted. Set aside to cool for 5 minutes.
  3. Lightly beat the egg in a medium bowl. Stir in the brown sugar, banana and vanilla. Pour the melted chocolate mixture into the banana mixture, and stir until well combined. Add the flour, stirring just until incorporated. Spread the mixture into the prepared tin.
  4. Bake in preheated oven until a skewer inserted near the centre comes out with moist crumbs, 20 to 25 minutes. Don't over bake. Remove, and cool tin on wire rack before cutting.
