Coconut Tea Cake

    This is a simple all butter coconut cake that is wonderful for afternoon tea.

    Serves: 14 

    • 250g butter, softened
    • 1 (200g) tub cream cheese, softened
    • 400g sugar
    • 6 eggs
    • 2 teaspoons vanilla extract
    • 375g plain flour
    • 1/4 teaspoon bicarbonate of soda
    • 1/4 teaspoon salt
    • 200g desiccated coconut

    1. Preheat the oven to 170 C / Gas mark 3. Grease and flour a 25cm tube cake tin.
    2. In a mixing bowl, cream butter, cream cheese and sugar until light and fluffy. Add eggs, one at a time, beating well after each. Beat in vanilla.
    3. Combine the flour, bicarb and salt in a separate bowl; add to creamed mixture. Fold in coconut. Turn into the prepared tin.
    4. Bake in the preheated oven for 1 hour and 30 minutes, or until a skewer inserted near the centre comes out clean. Cool for 10 minutes before removing from tin to a wire rack to cool completely.
