Mexican rice

    This is the recipe for my grandma's rice. Being Mexican, this is about as authentic as you can get. Makes a great side dish to grilled meat or vegetables.

    Serves: 8 

    • 2 tablespoons vegetable oil
    • 350g (12oz) long grain rice
    • 225g (8 oz) passata
    • 1 teaspoon minced garlic
    • 1/4 teaspoon salt
    • 1 teaspoon freshly ground black pepper
    • 1 teaspoon ground cumin
    • 950ml (1 pint 14 fl oz) water

    1. In a medium saucepan, heat vegetable oil over medium heat. Sauté rice in the oil for 5 minutes, stirring frequently.
    2. Reduce heat to low, and stir in passata, garlic, salt, pepper and cumin. Stir in water. Cover and cook for about 20 minutes.

    I was having a mexican themed dinner party so was a little worried about how this would turn out, having never made it before. From California, I've always loved Mexican Food and wanted to make "that rice" which always came with the meal in good restaraunts. Happily, I was not dissappointed! I always doubled-up on the spices and added extra salt,pepper and cumin (and a small finely chopped red onion) - result was some of the best Mexican Rice ever.
