Flourless peanut butter cookies

    Heavy, yummy and very peanut-buttery. A great gluten free cookie, and just three ingredients.

    Serves: 6 

    • 260g peanut butter
    • 200g caster sugar
    • 1 egg

    Prep:10min  ›  Cook:8min  ›  Ready in:18min 

    1. Preheat oven to 180 C / Gas mark 4.
    2. Combine ingredients and drop by teaspoonfuls on baking tray. Bake for 8 minutes. Let cool. Recipe doesn't make very many, so you could double recipe as you desire.

    these are so delicious and couldn't be easier/quicker to bake! i've made them a few times and i would recommend using crunchy peanut butter if you have it- the nuts just boost the taste and texture even more! also i found they don't spread much in the oven so if you like your cookies on the thinner side be sure to flatten the balls with a fork before you bake them  -  03 Mar 2013

    Made these today, Christmas Eve, for a last minute gift. I got 2 dozen plus two for me out of the mix! Really easy and quick. I made them before lunch, let the oven heat over lunch while the mix sat in the fridge and then baked them.  -  24 Dec 2010
