    About this recipe: I had a lot of peppers and tomatoes from the garden and wanted something spicy for a snack.

    Ingredients
    Serves: 10 

    • 4 Medium tomatoes, diced
    • 250g diced canned tomatoes
    • 75g diced red onion
    • 3 tablespoons chopped spring onion
    • 75g diced yellow pepper
    • 1 tablespoon seeded and diced jalapeño or green chilli
    • 4 tablespoons chopped fresh coriander
    • 1 1/2 tablespoons fresh lime juice
    • 2 tablespoons salt
    • 1/4 teaspoon black pepper
    • 1/2 teaspoon dried oregano leaves
    • 1/4 teaspoon garlic powder

    Method
    Prep:30min  ›  Extra time:30min  ›  Ready in:1hr 

    1. Place all ingredients in food processor and mix briefly vegetables should remain chunky. Pour in bowl, cover and refrigerate. May be stored up to 1 week. Makes 750ml.
