Alan's Ultimate Bran Muffins

My two-year-old loves these high-fibre muffins, but they make a healthy and tasty snack for anyone at any age!

Ingredients

  • 120g (4 oz) wholemeal flour
  • 120g (4 oz) wheatgerm (such as Jordans)
  • 160g (5.5 oz) all-bran
  • 65g (2 oz) porridge oats or oat bran
  • 2 teaspoons baking powder
  • 2 teaspoons bicarbonate of soda
  • 2 teaspoons ground ginger
  • 3 tablespoons vegetable oil
  • 140ml (5 fl oz) honey
  • 285ml (10 fl oz) semi-skimmed milk
  • 225ml (8 fl oz) low-fat plain yoghurt
  • 2 eggs, beaten
  • 170g (6 oz) sultanas

Preparation method

  1.   Preheat oven to 180 C / Gas mark 4. Lightly grease a 12 cup muffin tin.
  2.   In a medium bowl, mix wholemeal flour, wheatgerm, all bran, oats, baking powder, bicarbonate of soda and ground ginger.
  3.   In a separate medium bowl, thoroughly blend oil, honey, milk, yoghurt and eggs. Mix in sultanas.
  4.   Gradually fold milk and sultana mixture into the flour mixture until just moistened. Spoon into the prepared muffin pan.
  5.   Bake 20 to 25 minutes in the preheated oven, or until a toothpick inserted in the centre of a muffin comes out clean.
