Andalusian Bean and Orange salad

    Ingredients
    Serves: 6 

    • 1 x 300g can cannellini beans, drained
    • 2 oranges, peeled and segmented
    • 1/2 cucumber, chopped
    • 2 medium vine tomatoes, deseeded and chopped
    • 1 green pepper, deseeded and chopped
    • 3 tbsp olive oil
    • 1 tbsp sherry vinegar
    • salt and black pepper
    • pinch of cinnamon

    Method

    1. Place the beans, orange segments and vegetables into a large serving bowl.
    2. Whisk together the oil and vinegar and season to taste. Pour the dressing over the salad and toss gently.
    3. Sprinkle with a little cinnamon to serve.
