Choc chip rolo cookie biscuits

    Okay, these were supposed to be cookies, but I forgot to add baking powder, but I think they're cuter like this^^

    Serves: 60 

    • 250g margerine/butter
    • 250g caster sugar
    • 2 eggs
    • 2 tsp vanilla extract/essense
    • 100g milk choc chips
    • 200g white choc chips
    • 3 tubes of rolos
    • 650g self raising flour(maybe a bit more)

    Prep:15min  ›  Extra time:15min  ›  Ready in:30min 

    1. Cream the butter/marg, sugar and vanilla. Mix in the eggs.
    2. Chop the rolos up really small.
    3. Whack in all of the chocolate and mix it all up.
    4. Mix in flour. After a while, this is easier by hand. If it's too soft, add some more flour.
    5. Grease some baking trays.
    6. Roll teaspoonfulls into balls, place on tray and flatten slightly with a fork.
    7. Cook at 170/180ish for about 10/15, possibly 20 minutes. You may need to cook them in two batches.
    8. Cool on a rack for about 10 minutes before putting on a plate.
    9. These are super-yummy biscuits by the way xD

    These are lovely, although I made mine a bit bigger and got 43 biscuits. They are very sweet, but not overly so, which surprised me after seeing the amount of chocolate which went into them! :D I might add some cinnamon or ginger next time I make them, just to give a different layer of flavour from the sweetness.  -  05 Feb 2015


    Delicious! and really easy to make! but i halved the mixture to make 30!  -  09 Aug 2013
