Almond and Celery Chicken Salad

About this recipe:
Sometimes the best approach is the simplest one, as in this mix of chicken, mayonnaise, almonds and celery.
60g (2 oz) blanched slivered almonds
4 tablespoons mayonnaise
1 tablespoon lemon juice
freshly ground black pepper to taste
280g (10 oz) cooked chicken meat, chopped
1 stalk celery, chopped
- Place almonds in a frying pan. Toast over medium-high heat, shaking frequently. Watch carefully, as they burn easily.
- In a medium bowl, mix together mayonnaise, lemon juice and pepper. Toss with chicken, almonds and celery. Serve atop lettuce leaves or in a sandwich.
Serves 4 not 2

I have this often, it's quick and easy and tastes just lovely. One of my favourites if i fancy mayonnaise.
