Almond and Celery Chicken Salad

    Sometimes the best approach is the simplest one, as in this mix of chicken, mayonnaise, almonds and celery.

    Serves: 2 

    • 60g (2 oz) blanched slivered almonds
    • 4 tablespoons mayonnaise
    • 1 tablespoon lemon juice
    • freshly ground black pepper to taste
    • 280g (10 oz) cooked chicken meat, chopped
    • 1 stalk celery, chopped

    1. Place almonds in a frying pan. Toast over medium-high heat, shaking frequently. Watch carefully, as they burn easily.
    2. In a medium bowl, mix together mayonnaise, lemon juice and pepper. Toss with chicken, almonds and celery. Serve atop lettuce leaves or in a sandwich.

    I added some pasta to add a volume, and some seasoning i.e. paprika, chilli powder and garlic for fried chicken.  -  28 Feb 2018


    I have this often, it's quick and easy and tastes just lovely. One of my favourites if i fancy mayonnaise.  -  22 May 2015
