About this recipe: This recipe is great but I cheat using a ready made flan base, but you can use Sponge fingers instead. However the flan base looks better for presentation and saves time.

  • Base
  • 1 large Flan base
  • Sauce
  • 200g Castor sugar
  • 4 tsp Coffee granules
  • 120ml Coffee liquor/Rum
  • 280ml Boiling water
  • Filling
  • 250g Mascarpone cheese
  • 240g Icing sugar
  • 60ml Rum
  • 5ml Vanilla extract
  • 475ml Double cream
  • 1 tbsp Cocoa powder

  1. Place flan base onto a large serving plate.
  2. Add all of the sauce ingredients together, stir well and set aside to cool.
  3. Combine mascarpone cheese, sugar, rum, vanilla in a mixing bowl. Using an electric mixer mascarpone mix in a mixer and add cream in gradually until stiff peaks form.
  4. Pour the cooled sauce onto Flan base evenly and when absorbed spoon filling on top. Even out and smoothen, then make spikes with a spoon. Then evenly sieve cocoa powder on top.
  5. Chill and serve.

this was so easy to prepare and went down well with the whole family, id recommend 10 -12 servings from the large base - 28 May 2011
