Fry the sausage chunks until browned. Remove from pan and set aside. Reduce heat to medium and add carrots, potatoes, garlic, thyme and rosemary to the same pan. Cover and cook for 10 minutes. Return sausage chunks to pan. Add tomatoes and bring to boil. Season with salt and pepper. Cover and simmer over medium-low heat for 45 minutes.
