    About this recipe: Red, juicy tomatoes fresh from the garden join fresh peppers in this EASY salad! Goes well with crusty bread, to 'dip' in the juices!

    Serves: 4 

    • 4 tomatoes, cut into bite-sized pieces
    • 1 large pepper, cut into bite-sized pieces
    • 2 tablespoons olive oil
    • dried oregano to taste
    • salt to taste

    1. Combine tomatoes and pepper in a large bowl. Pour in the olive oil; stir gently to coat the vegetables. Sprinkle with the oregano and salt to taste. Cover, and refrigerate before serving.

    Make this early in the day so that the flavours have time to blend.
