Coriander and garlic potatoes

    The traditional way to cook these potatoes is to deep-fry them so they are nice and crispy but you could drizzle a little olive oil over them and roast them in the oven for 45 minutes before adding the garlic, fresh coriander and cumin.

    Serves: 8 

    • 1 litre oil for frying, or as needed
    • 4 large potatoes, washed and cubed
    • 1 teaspoon vegetable oil
    • 90g chopped fresh coriander
    • 4 cloves garlic, minced
    • 1/2 teaspoon cumin
    • 1 tablespoon fresh lemon juice
    • salt to taste

    1. Heat the oil in a deep-fryer until it reaches 190 degrees C. Add potatoes, and cook until golden brown, about 8 minutes. Drain on kitchen roll.
    2. Meanwhile, heat 1 teaspoon oil in a large frying pan over medium heat. Add the coriander and garlic; cook and stir for about 5 minutes. Add fried potatoes to the pan along with the cumin, lemon juice and salt. Stir to coat the potatoes, and serve.

    Made these using roasted sweet potatoes (35 mins @ 200c) instead of normal spuds. Really tasty!  -  23 May 2017


    Enjoyed these potatoes very much. Instead of deep frying potatoes, I baked them in the oven then added them to the skillet with cilantro and garlic mixture.  -  10 Mar 2007  (Review from Allrecipes US | Canada)
