About this recipe: After reading so much of information on the goodness of herbs and Thyme specifically, I have this recipe using fresh Thyme. By combining it with Salmon, a high Omega 3 fish with fresh herbs - a good source of fibre, anti-oxidants, vitamins & minerals - it makes a good cosy dish for dinner.

    Ingredients
    Serves: 2

    • 2 salmon fillets
    • 2 teaspoons olive oil, divided
    • 1/2 onion, sliced into strips
    • 3 tbsp oyster sauce
    • 1/2 tsp caster sugar
    • 1 tsp pepper
    • 50ml water
    • Marinade
    • 1 tsp salt
    • 1 tsp ground black pepper
    • 2 tbsp chopped fresh thyme
    • dash of dried basil
    • Garnish
    • 2 to 4 thyme sprigs

    Method
    Prep:10min  ›  Cook:20min  ›  Extra time:2hr  ›  Ready in:2hr30min

    1. Place all of the marinade ingredients in a resealable plastic bag. Add the salmon and leave to marinate for 2 hours in the fridge.
    2. Once salmon is ready to cook, remove salmon from the bag and discard the marinade. Heat 1/2 the olive oil in a frying pan. Pan fry the salmon fillets for 1 to 2 minutes on each side, taking care not to overcook the fish. Set aside.
    3. Heat the remaining olive oil in the same pan and saute the onion till translucent. Add the oyster sauce, sugar, pepper and water and simmer for 2 minutes.
    4. Pour the sauce onto a serving platter, and place the salmon on top of the sauce. Garnish with thyme sprigs to serve.
