Baked seafood rice
Last weekend, I thought of making something special, baked rice with seafood. And.... the result is "superb"!
Ingredients
Serves: 4
- 1kg John Dory fillets, cut in half
- 300g large prawns
- 6 seafood sticks, such as Sealord, cut into cubes
- 30g butter
- 5 cloves garlic, minced
- 8 button mushrooms - white / brown
- 200g rice, washed, drained
- 1 tsp salt
- 1 tsp white pepper
- drizzle of olive oil
- approx 100g grated cheese - Mozarella / Cheddar (your preference)
- Seafood Marinade
- 1 tsp salt
- 1 tbsp ground black pepper
- 6 tbsp chopped fresh basil leaves
- dash of sugar

- Marinade seafood (fish, prawns & crab sticks) with all marinade ingredients. Set aside for 1 hour.
- Heat a wok with butter, saute garlic & button mushrooms till fragrant.
- Add rice, stir & mix for 5 mins. Pour into rice cooker, along with salt and pepper, and add water to cook according to manufacturer's instructions.
- Prepare any baking dish by coating it with some olive oil.
- Scoop rice into the baking dish. Arrange seafood on the rice. Sprinkle some olive oil. Top up with grated cheese.
- Bake in the oven at 180 C / Gas mark 4 for 10 to 20 mins. Serve immediately.
