Anise biscuits

    A traditional German biscuit that is crisp and chewy with a meringue-like texture. You could always use anise extract if you prefer not to include the fennel seeds.

    Serves: 36 

    • 3 eggs, beaten
    • 200g caster sugar
    • 250g plain flour
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon cream of tartar
    • 1 tablespoon fennel seed

    1. Preheat oven to 180 C / Gas mark 4.
    2. Combine the beaten eggs and sugar and beat for 15 minutes. Stir in the flour, baking powder, cream of tartar and fennel seeds.
    3. Drop by teaspoonfuls onto a greased baking tray and bake in the preheated oven for 15 minutes.

    They were very dry. if I made them again I would reduce the amount of flour, baking powder and tartar.  -  11 Aug 2015
