    Watercress pesto: great with pasta, on sandwiches and in salads too!

    Ingredients
    Serves: 8 

    • 1/2 clove garlic
    • 40g walnuts
    • 85g watercress, rinsed and dried
    • 80g freshly grated Parmesan cheese
    • 2 tablespoons mayonnaise

    1. Place the garlic, walnuts, watercress, Parmesan cheese and mayonnaise into a food processor or blender. Pulse until a finely chopped paste has formed.

    Used different ingredients. I would suggest adding lime juice and oliver oil instead of mayonnaise.  -  04 Feb 2010

    I had never tried watercress before, nor had I made my own pesto. I really like this pesto a lot. I added lemon to mine after putting it on pasta. This recipe is great! Leftovers for lunch tomorrow  -  13 Nov 2010  (Review from Allrecipes US | Canada)
