    About this recipe: This is a delightful salad that doesn't skimp on taste.

    Serves: 8 

    • 2 (400g) tins chickpeas, drained
    • 2 cucumbers, halved lengthways and sliced
    • 12 cherry tomatoes, halved
    • 1/2 red onion, chopped
    • 2 cloves garlic, minced
    • 2 (240g) jars sliced black olives, drained
    • 50g feta cheese, crumbled
    • 125ml Italian salad dressing or vinaigrette
    • 1/2 lemon, juiced
    • 1/2 teaspoon ground black pepper
    • salt to taste

    1. Combine the beans, cucumbers, tomatoes, red onion, garlic, olives, feta, salad dressing, lemon juice, salt and pepper. Toss together and refrigerate 2 hours before serving. Serve chilled.
