Green bean and feta salad

    A tasty salad using fresh green beans and feta cheese in a tangy dressing.

    Serves: 5 

    • 675g fresh green beans
    • 1 onion, peeled
    • 2 cloves garlic, chopped
    • 125ml rice wine vinegar
    • 125ml apple cider vinegar
    • 80ml rapeseed or olive oil
    • 1 tablespoon caster sugar
    • 3/4 teaspoon salt
    • ground black pepper to taste
    • 1 dash hot sauce, such as Tabasco
    • 1 dash Worcestershire sauce
    • 100g feta cheese, crumbled

    1. Thinly slice the onion and place into a colander over the sink. Add the trimmed green beans to a large pot of boiling water and boil until crisp tender (about 4 minutes). When the beans are done, drain the water into the colander to slightly cook the onions. Immediately rinse all in cold water to stop the cooking process.
    2. For the dressing: In a large bowl, whisk together the garlic, rice wine vinegar, cider vinegar, oil, sugar, salt, pepper, hot sauce and Worcestershire sauce. Add beans, onions and cheese and stir until combined. Place in a nonreactive container and refrigerate for at least 4 hours. Enjoy!

    Absolutey amazing! I did make a slight modification though. I used 1/4 C ea. red wine vinegar, balsamic vinegar, and cider vinegar. I just eyeballed the amount of oil, but I know I didnt use 1/3 of a cup, thats too much. I probably went a little heavier on the garlic and feta too. I just put my onions in fresh, not with the hot water over them. Going to try with red onions next time.     Very good. I leave the beans whole and omit the feta. We eat the beans like french fries next to a sandwich or burger. Dressing is tasty. There was a good bit of dressing left over and I reused it on another batch that were just as good. Have also substitued balsamic vinegar for the apple cider vinegar with positive results.
