    About this recipe: This is a very fresh and delicious salad combining watercress and crab meat in a light vinaigrette dressing.

    Serves: 4 

    • 150g bag watercress, roughly chopped
    • 175g tinned crabmeat
    • 1 stick celery, chopped
    • 2 spring onions, chopped
    • 1 tomato, chopped
    • 4 tbsp olive oil
    • 4 tbsp rice vinegar
    • 1 teaspoon chopped fresh basil
    • 1 pinch salt and pepper to taste

    1. In a large bowl, combine the watercress, imitation crabmeat, celery, spring onion and tomato. In a separate bowl, whisk together the olive oil, vinegar, basil, salt and pepper. Pour over the watercress mixture, and toss to coat evenly. Serve immediately.
