150g bag watercress, roughly chopped
175g tinned crabmeat
1 stick celery, chopped
2 spring onions, chopped
1 tomato, chopped
4 tbsp olive oil
4 tbsp rice vinegar
1 teaspoon chopped fresh basil
1 pinch salt and pepper to taste

In a large bowl, combine the watercress, imitation crabmeat, celery, spring onion and tomato. In a separate bowl, whisk together the olive oil, vinegar, basil, salt and pepper. Pour over the watercress mixture, and toss to coat evenly. Serve immediately.
