Grease a small cake tin with butter (I add a tbsp of cocoa to line it too.) Preheat oven to 180 C / Gas 4.
Beat the butter and sugar together in a bowl.
Add the vanilla essence to the beaten eggs and add to the creamed sugar bit by bit until mixed well.
Stir the flour in bit by bit to the mixture.
Mash the bananas with a fork until gooey and add to the cake mixture.
Pour into the greased tin (I always have extra so I make muffins with the leftover batter). Bake in the oven on a middle shelf for 35-45 mins until skewer comes out clean. Leave to cool on a baking tray.
Once cooled, turn upside down to remove from tin and sift icing sugar over the top of cake.
Slice and serve, delicious served with peppermint tea!
This banana bread is very nice but very sweet I have made a second loaf with half the sugar and it was much nicer, I thought with the bananas and the sugar being the same amount as the flour it was too sweet, but overall a great recipe and my family loved it. - 13 Jul 2011
