Method Prep:45min › Cook:12min › Extra time:3min › Ready in:1hr
Preheat oven to 190 C / Gas 5.
First put all of the sugar and butter in a bowl and WHISK the ingredients together. At first the butter will stick to the whisk but keep peeling it off and continue whisking; it will turn pale and fluffy.
Add beaten eggs into the mixture and sieve half the flour into the bowl then mix.
Add the rest of the flour and 2 tablespoons of milk
Then add as much preferred hot chocolate powder and it should turn a light beige colour. Add chocolate chips if you want some.
Then bake for roughly 12 minutes. Leave them to cool.
Add as much butter as you would like (75g is normally a good amount) then add as much icing sugar needed until it is fluffy. Then add some more hot chocolate powder as you would like and it will be a beige colour again.
Cut the tops off of the cakes and cut in half then put as much needed buttercream into the cake then put the butterfly tops on.
Truly yummy! Didn't take long to make at all, even allowing for cooling down and icing. Didn't cut off the tops, just iced them, sprinkled with grated Galaxy chocolate and chopped walnuts. Had no choc chips but will put some in next time. Very moreish indeed!! - 29 Apr 2010
