    About this recipe: These unique biscuits are easy to make, but will surely impress guests. Serve with wine or an aperitif.

    • 125g chopped walnuts
    • 1 egg yolk
    • 80g butter
    • 250g Gorgonzola
    • 130g plain flour
    • a pinch of salt

    1. Mix together the butter and cheese. Add the egg yolk, flour and walnuts.
    2. Turn the dough out onto a clean work surface and roll into a log about 5cm in diameter. Roll in baking parchment, then place in a freezer bag, and place in the freezer for at least an hour.
    3. One hour before you're ready to bake, remove the dough from the freezer and allow it to thaw slightly at room temperature.
    4. Meanwhile, preheat the oven to 180 C / Gas mark 4, and line a baking tray with parchment.
    5. Cut the dough into discs about 3mm thick. Place the biscuits on the prepared baking tray, and bake in the preheated oven for 12 minutes.

    Cook's note

    These delicious biscuits are extremely convenient - you prepare the dough in advance and then store in the freezer for weeks until you're ready to bake them!

    Excellent. Only had a small piece of blue so threw some goats cheese in, DELICIOUS..mmmmmm Took a little longer to cook but only by a few minutes. Well worth the wait :o) Thanks for sharing...  -  19 Dec 2016
