Bacon, asparagus and goat cheese pizza

    Asparagus, bacon and goat cheese top this deliciously intriguing pizza. A great way to get kids to eat their asparagus!

    Serves: 8 

    • 5 bacon rashers, cut into 2cm pieces
    • 1 unbaked pizza base
    • 200g grated mozzarella cheese
    • 150g chopped fresh asparagus
    • 125g halved cherry tomatoes
    • 300g goat cheese
    • 1 teaspoon red chilli flakes
    • freshly ground black pepper to taste

    1. Preheat the oven to 190 C / Gas mark 5.
    2. Place bacon in a frying pan over medium-high heat. Cook for a few minutes, but do not cook until crisp. Remove to kitchen roll and set aside.
    3. Place the pizza base on a pizza tin or large baking tray. Top with mozzarella cheese, bacon pieces, asparagus and tomatoes. Dot with goat cheese, then season with red chilli flakes and black pepper.
    4. Bake for 15 to 20 minutes in the preheated oven, until the crust is golden brown underneath when you lift it up to take a peek. Let cool for about 3 to 5 minutes before slicing and serving.
