    About this recipe: This is a fresh salad with a light dressing inspired by Mediterranean and Asian flavours.

    Serves: 5 

    • 125ml rice vinegar
    • 1 tablespoon caster sugar
    • 1 teaspoon sea salt
    • 1/2 teaspoon sesame oil
    • 2 tablespoons olive oil
    • 350g asparagus - cut into 2.5cm pieces, cooked and drained
    • 100g crumbled feta
    • 1 large tomato, diced
    • 1 spring onion, diced
    • 2 tablespoons chopped fresh coriander

    1. Whisk together the rice vinegar, caster sugar, sea salt, sesame oil and olive oil in the bottom of a salad bowl. Add the asparagus, feta, tomato, spring onion and coriander to the bowl with the dressing; toss to coat. Cover and refrigerate for 1 hour before serving.
