125ml rice vinegar
1 tablespoon caster sugar
1 teaspoon sea salt
1/2 teaspoon sesame oil
2 tablespoons olive oil
350g asparagus - cut into 2.5cm pieces, cooked and drained
100g crumbled feta
1 large tomato, diced
1 spring onion, diced
2 tablespoons chopped fresh coriander

Whisk together the rice vinegar, caster sugar, sea salt, sesame oil and olive oil in the bottom of a salad bowl. Add the asparagus, feta, tomato, spring onion and coriander to the bowl with the dressing; toss to coat. Cover and refrigerate for 1 hour before serving.
