Apple Bran Muffins

Tasty and fast apple muffins. They are great for breakfast!

Ingredients

  • 50g (2 oz) bran flakes cereal
  • 160g (5.5 oz) plain flour
  • 55g (2 oz) soft dark brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon baking powder
  • 285ml (10 fl oz) apple juice
  • 55g (2 oz) butter, melted
  • 1 teaspoon vanilla extract
  • 1 apple - peeled, cored and chopped

Preparation method

  1.   Preheat oven to 190 C / Gas mark 5. Grease muffin tin, or line with paper cups.
  2.   In a mixing bowl, combine bran flakes, flour, brown sugar, cinnamon and baking powder. Stir in apple juice, butter, vanilla, and apple.
  3.   Spoon the mixture into the prepared muffin tin. Bake in preheated oven for 25 to 30 minutes.

    I was going to teach a bunch of children some basic cooking with these muffins, and luckily I tried them first. They were good muffins but first batch were way too wet. I used about 225gms of wholemeal flour in the second batch, and they came out fine. I was also surprised at there was no egg but yes, they didn't need it. Nice and simple for children to make.

    Review: Melafafon

    These were, as promised, easy to make, but the recipe was lacking and needed tweaking. It turned out very watery, which I fixed by adding 160g of wholemeal flour (yes, it needed that much) which also made them look a lot more bran-muffin-ish :) I was also surprised that there was no egg, but they didn't need it, and it turned out perfect for my egg-and-dairy-allergic niece (as I used margarine instead of butter) so I've added an 'egg-free' tag. At the end of it all, they tasted brilliant hence the four stars but the very watery consistency was a major downfall and with the addition of 160g wholemeal flour I'd be looking at 5 stars. I had some problems with cooking them- I'll put them on at a lower temperature in future when I make them (which I will!) but my oven is rather temperamental so I don't think I can blame that on you! Overall a very simple, quick and tasty muffin recipe :)
