Coconut Lamb Skewered Satay

    Serves: 4 

    • 4 lamb leg chops
    • 1 small onion
    • 1 garlic clove
    • 1 tbsp tamarind sauce
    • 1 tbsp soy sauce
    • 1 tbsp vinegar
    • 1 tbsp sambal olek (or chilli paste)
    • 4 tbsp desiccated cocount
    • 1 tsp sesame oil

    1. Remove fat and bones from lamb chops and cut into 2cm cubes.
    2. Combine lamb with chopped onion, garlic, tamarind sauce, soy sauce, vinegar, sambal olek and coconut. Marinate for 2 hours or or refrigerate overnight (or leave for as little or long as you like!)
    3. Thread onto skewers, brush with sesame oil and cook under a pre-heated grill.
