Damper with Cocky's Joy

Very traditional Australian dish that my family would make when we were out camping in the middle of the bush (would use camp fire to cook and put the damper on a stick - the hole the stick would leave was filled with the butter and golden syrup)

Ingredients

  • 3 cups self raising flour
  • 90g melted butter
  • 1/2 cup milk
  • 1-2 tsp salt
  • 1/2 cup water
  • Golden Syrup

Preparation method

  1.   Preheat oven to 210 degrees. Brush oil over baking tray.
  2.   Sift flour and salt into a large bowl. Make a well in the centre. Combine butter, water and milk and add to flour. Stir until combined.
  3.   Knead until smooth. Score into 8 sections 1 cm deep. Brush with milk, dust with flour and bake for 10 minutes.
  4.   Reduce heat to 180 degrees. Bake for 15 minutes or until golden brown and sounds hollow when tapped.
  5.   Serve with extra butter and Golden Syrup.
