About this recipe: A sweet, delicious warm spiced milk recipe. Sure to send even the toughest insomniac or young child into dreamland with hardly a fuss.

Serves: 2 

  • 2 cups milk - preferably full fat milk, but any percentage is fine
  • 2 tsp chopped fresh ginger
  • 1 tsp anise seeds - crushed lightly
  • 1 cinnamon stick
  • 2 tbs golden syrup
  • 1 tbs granulated sugar
  • 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1 tbs butter
  • A pinch of ground cinnamon and ginger, for garnish (Optional)

  1. Pour the milk into a small sauce pot, and put over medium high heat.
  2. Add the ginger, anise, cinnamon and extracts.
  3. Heat until hot, but be careful not to scald the milk. Test the temperature often against your lips with a spoon.
  4. Strain the milk into a spouted jug or liquid measuring cup. Stir in the golden syrup, sugar and butter. At this time, you may stir in the ground cinnamon and ginger.
  5. Pour into cups and serve. Whipped cream may also be added on top, if desired.
