Fruity cranberry relish

    A nice food gift to make around Christmas time. This relish goes well with pork, or on leftover turkey in a sandwich on Boxing Day.

    Serves: 16 

    • 2 large oranges
    • 675g fresh cranberries
    • 2 apples - peeled, cored and chopped
    • 2 celery sticks, chopped
    • 600g caster sugar

    Prep:4hr  ›  Ready in:4hr 

    1. Finely grate orange peel; reserve. Peel oranges and discard white membranes. Separate oranges into sections and place half in a food processor or blender.
    2. To the food processor, add half of the cranberries, apples and celery. Process until coarsely chopped. Transfer to a bowl; repeat with remaining oranges, cranberries, apples and celery.
    3. Stir in sugar and reserved orange peel. Cover and refrigerate for at least 4 hours or overnight.


    You will need to plan for overnight chilling time to get best results.

    Made just a half batch and added 1/3 cup chopped walnuts to it. This is just excellent mixed 50/50 with cream cheese pineapple spread and spread on celery sticks. Try it, you'll like it!!
