Apple muffins

    This is a basic fruit muffin recipe. I use chopped apples, but any type of fruit may be added to make a quick and easy batch of fruit muffins.

    Serves: 12 

    • 255g (9 oz) plain flour
    • 3 teaspoons baking powder
    • 1/2 teaspoon salt
    • 100g (4 oz) caster sugar
    • 60g (2 oz) butter
    • 225ml (8 fl oz) semi-skimmed milk
    • 110g (4 oz) apple - peeled, cored and chopped

    1. Preheat oven to 200 C / Gas mark 6. Lightly grease a 12-cup muffin tin, or line with paper muffin cups.
    2. In a large bowl, sift together the flour, baking powder and salt.
    3. In a separate bowl, cream together sugar and butter. Stir the flour mixture into the sugar mixture alternately with the milk. Fold in the fruit. Pour batter into prepared muffin tin.
    4. Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into the centre of a muffin comes out clean.

    Something else. add a tea spoon of ground cinnamon  -  12 Nov 2008


    Made it healthier. I used half wholemeal flour, added a dash of lemon juice (to go with zingy sharp apples) and sprinkled a bit of brown sugar on top. yum!  -  29 Aug 2009


    I love these muffins so do my husband and kids. We have tried them with apple and also with apple and blackberry they are really yummy and so easy to make  -  30 Aug 2011
