Apple Muffins

This is a basic fruit muffin recipe. I use chopped apples, but any type of fruit may be added to make a quick and easy batch of fruit muffins.

Ingredients

  • 255g (9 oz) plain flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 100g (4 oz) caster sugar
  • 60g (2 oz) butter
  • 225ml (8 fl oz) semi-skimmed milk
  • 110g (4 oz) apple - peeled, cored and chopped

Preparation method

  1.   Preheat oven to 200 C / Gas mark 6. Lightly grease a 12-cup muffin tin, or line with paper muffin cups.
  2.   In a large bowl, sift together the flour, baking powder and salt.
  3.   In a separate bowl, cream together sugar and butter. Stir the flour mixture into the sugar mixture alternately with the milk. Fold in the fruit. Pour batter into prepared muffin tin.
  4.   Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into the centre of a muffin comes out clean.

    I used half wholemeal flour, added a dash of lemon juice (to go with zingy sharp apples) and sprinkled a bit of brown sugar on top. yum!

    I made these with twice the amount of apple and they were really moist and and great with custard or warm with ice cream.

    Really nice muffins. Found the oven was a little bit too hot ( we do have a rather efficient oven). second batch better cooked at gas mark 5. Really tasty and so easy my two year old is making them. Meant to put 4 stars up there but can't change it now.
