Greek runner beans

    A nice mix of runner beans, onion and tomatoes simmered until soft and delicious! These are called 'Fasolakia' in Greek. Just like Ya Ya used to make!

    Serves: 8 

    • 180ml olive oil
    • 225g chopped onions
    • 1 clove garlic, minced
    • 1kg fresh runner beans, rinsed and trimmed
    • 3 large tomatoes, diced
    • 2 teaspoons sugar
    • salt to taste

    1. Heat the olive oil in a large frying pan over medium heat. Cook and stir the onions and garlic in the pan until tender.
    2. Mix the runner beans, tomatoes, sugar and salt into the pan. Reduce heat to low, and continue cooking 45 minutes, or until beans are soft.

    What a great way to help use up this seasons excellent runner beans and tumbling tomatoes served it on crispy jacket spuds with crumpled feta cheese and a handful of fresh chopped mint lovely  -  16 Aug 2017


    Runner beans aren't the most exciting things in the world, but this recipe turns them around Very nice as a side dish.  -  12 Sep 2015
