Slow cooked chicken one pot

    A meal low in fat, high in flavour, easy to cook and very little washing up - just chuck it all in, sit back with a glass of something nice and enjoy a nice meal.

    Serves: 2 

    • 4 skinless chicken thighs
    • 4 whole garlic cloves
    • 1 onion, roughly chopped
    • juice of 1/2 lemon
    • 1 small handful fresh thyme (lemon thyme even better)
    • 400g new potatoes, washed and left whole unless huge
    • 150ml stock or white wine
    • Optional
    • 6 carrots, halved
    • peppers, deseeded and quartered
    • mushrooms, whole
    • large florets of cauliflower

    1. Preheat oven to 160 C / Gas 3.
    2. Take a large roasting tin and put all ingredients in, season and pour over stock or wine. Get your hands in and mix everything together, spread it all out.
    3. Cover tightly with foil and put in oven for 2 hours.

    Cook's notes

    I just serve it as it is - it's quite a hearty meal for two. You can use breast but I find it too dry. For the optional ingredients, I usually just throw in whatever I have to hand.
