This is so easy and guests love it. The brandy adds a special flavour, though rum works well too. Quite nice with ice cream or sorbet.
Take the pineapple and place on top of ice cream, then drizzle with the marinade. Or, make something like a millefeuille by baking some ready made puff pastry that's cut in squares. layer with the pineapple slices (cut them thinly for this and reduce cooking time) and whipped cream or creme fraiche.
