About this recipe: This BBQ sauce has a great island flavour -- not like jerk sauce but still slightly spicy. Use as you would your favourite BBQ sauce -- great on ribs, chicken, chops, more.

    • 1 guava - peeled, seeded and chopped
    • 400g passata
    • 150g tomato puree

    • 4 tablespoons dark brown soft sugar
    • 2 tablespoons liquid smoke flavouring

    1. In a large saucepan over low heat, stir together the guava, passata, tomato paste, water and brown sugar until well blended. Stir in liquid smoke, fresh lemon juice, Worcestershire sauce, habanero sauce and treacle. Season with garlic granules, salt and black pepper. Cover, and cook 30 minutes, stirring occasionally, until thickened.

Find liquid smoke flavouring online or in some specialty shops. If unavailable, this BBQ sauce can be made without it.
