Chilli halloumi & chestnut mushrooms

    A gorgeous vegetarian BBQ staple!!

    Serves: 2 

    • 1/2 pack of halloumi
    • 6 chestnut mushrooms
    • 2 x wholemeal pitta breads
    • 3 tbsp mayonnaise
    • sweet chilli sauce
    • 1 tsp mild chilli powder
    • baby leaf salad

    1. Slice the Halloumi cheese into thick slices and marinate the slices and 6 whole chestnut mushrooms in the sweet chilli sauce for 10 minutes.
    2. Place the Halloumi onto the BBQ (when the coals have gone grey) and the mushrooms on a piece of foil on top of the BBQ grill.
    3. Mix the chilli powder into the mayonnaise in a bowl.
    4. Turn the cheese after 5 minutes to brown both sides
    5. When the cheese is nearly ready (is turning brown) add the pitta to the BBQ and lightly toast until warm
    6. Remove the pitta and spoon the mayonnaise mixture in. Place the cheese and mushrooms in and stuff full with green leaves. Eat and enjoy!!
