Rhubarb and custard muffins

    A twist on a classic. What can I say?? I love muffins!!! Tart rhubarb makes them really delicious.

    Serves: 12 

    • 150g chopped rhubarb
    • 150g plain flour
    • 50g custard powder
    • 2 teaspoons baking powder
    • 150g sugar
    • 1/2 teaspoon salt
    • 150ml milk
    • 100ml sunflower oil
    • 2 small eggs or 1 large
    • 1/2 teaspoon vanilla extract
    • 1/2 teaspoon yellow food dye (optional but fun!!)

    Prep:10min  ›  Cook:25min  ›  Ready in:35min 

    1. Preheat the oven to 200 C / Gas 6.
    2. Gently cook chopped rhubarb in 1 tablespoon water and sugar to taste.
    3. Sift together flour, custard powder and baking powder. Add sugar and salt.
    4. Beat together milk, oil, eggs, vanilla and yellow dye (if using). Blend together egg mix and flour mix till smooth. Fold in rhubarb. Spoon into prepared muffin tray.
    5. Bake for 20 to 25 minutes.

    FABULOUS RECIPE!!!! I'd run out of muffin cases, so used a lined loaf tin instead and cooked it for 55 min. It is delicious! May use a bit of ground ginger next time to add to the flavour. Thank you for posting this recipe!  -  10 Oct 2010


    Yum yum! Great recipe, although I added 200g of rhubarb and substituted 50g of the caster sugar with dark brown sugar because I love the way it tastes with rhubarb and they were delicious! My daughter is delighted we are not giving these ones away so she can eat them all!  -  03 Jul 2012
