Spicy Mexican Artichoke Dip

    This recipe was given to me by sister and it is a big favourite with all of my friends. It is both moreish and flavoursome. It is a big hit with garlic fans!

    Serves: 8 

    • 150g of grated parmesan cheese
    • 1 can of artichoke hearts drained
    • 1 jar of jalapeno peppers drained and chopped
    • 2 cloves of garlic minced (I use 3 but I love garlic!)
    • 225g of mayonnaise
    • 1 tsp olive oil

    1. Mince the garlic in a garlic press and sautee in olive oil in a frying pan until golden, be careful not to burn it.
    2. Add the sauteed garlic into a bowl with the artichokes. In another bowl, mix together the mayonnaise, parmesan, jalapenos. Combine all the ingredients.
    3. Pour into a glass baking dish and bake at 190 C / Gas 5 for 20 mins or until it bubbles.
    4. Serve with nachos and margaritas!
