About this recipe: A special little girl I know wanted strawberry cupcakes for her birthday party. Knowing her eyes would be bigger than her tummy I made something both children and adults would enjoy. (The adults really, the kids had way too much choice of sweets to want these muffins!!) The cream cheese frosting really makes them a treat!

Serves: 12 

  • 200g flour
  • 150g sugar
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 1 sachet strawberry jelly
  • 2 small eggs (or 1 large)
  • 150ml cream (or milk - depends how decadent you want to be!)
  • 100ml sunflower oil
  • 1 strained tin of strawberries (or chopped fresh if you have them!)
  • Frosting
  • 100g sieved icing sugar
  • 1 tub mascarpone cheese (approx 250g)
  • 1 tsp vanilla extract
  • a drop of red food colouring if you want to go totally pink!
  • hundreds & thousands or sliced strawberries to decorate

Prep:15min  ›  Cook:25min  ›  Ready in:40min 

  1. Pre-heat oven to 200 C / Gas 6 and prepare your muffin tin.
  2. Sieve together your flour, salt, baking powder and jellly crystals. Add your sugar.
  3. Beat together your egg, cream (or milk) and oil.
  4. Add the wet ingredients to the dry ingredients, and blend together till smooth.
  5. Strain your strawberries and discard the syrup. With a fork mash your strawberries to a pulp (chop up into roughly 1cm cubes for fresh berries) and stir into your muffin mixture.
  6. Spoon into prepared tin & bake for 20-25 mins.
  7. Meanwhile, prepare the frosting by beating together all your ingredients till smooth.
  8. When muffins are cool spread on the frosting and sprinkle with hundreds & thousands (for a bit more refinement use sliced fresh strawberries!).
