Shanny's baked cauliflower cheese

    This is very easy & yummy recipe.

    Serves: 4 

    • 1 large cauliflower
    • 2 tablespoons butter
    • 2 tablespoons flour
    • 1/4 teaspoon ground nutmeg
    • 12 fl oz milk
    • 3 oz grated mature Cheddar cheese
    • salt and pepper (to taste)

    1. Add cauliflower florets to boiling water and simmer for about 6 to 8 minutes or until just tender.
    2. In a saucepan melt the butter over medium heat. Whisk in the flour and cook, stirring constantly, for 2 to 3 minutes, until the roux begins to color slightly. Slowly pour in the milk and cook for another 2 or 3 minutes until it thickens slightly, make sure you're stirring it the whole time so not to burn the milk.
    3. Remove the milk from the heat and stir in 3/4 of the grated cheese and add in the nutmeg, salt and pepper.
    4. Drain the cauliflower place in a buttered ovenproof dish. Pour the cheese sauce over the cauliflower and add sprinkle over the remaining grated cheese
    5. Bake in the oven for 15 to 20 minutes or until golden and bubbling.

    Really tasty and easy. I threw in some pasta pieces and courgette to turn it into a full meal, and put breadcrumbs on top mixed with the cheese, for a nice crust. Great recipe.  -  15 Aug 2012


    Very yummy indeed! I didn't use the nutmeg, and added a bit of parmesan. But it turned out very well. And the bf had seconds!!  -  10 Jul 2012
