Oreo cupcakes

    In my food tech lessons at school we had to design a cake for a coffee shop and this is what I came up with. I put half an Oreo in the side and some butter icing on top so that it looked like a cup.

    Serves: 12 

    • 125g butter
    • 125g caster sugar
    • 100g self raising flour
    • 25g cocoa powder
    • 1 teaspoon vanilla extract
    • 1 teaspoon baking powder
    • 2 tablespoons milk
    • 2 eggs
    • 6 chopped Oreos

    Prep:10min  ›  Cook:15min  ›  Extra time:5min  ›  Ready in:30min 

    1. Preheat the oven to 200 C / 170 C Fan / Gas 6.
    2. Put all of the ingredients except for the milk and Oreos in a food processor and blitz until smooth.
    3. Add the milk and blitz until it is runny. Stir in the Oreos. Spoon into 12 bun cases.
    4. Bake for 15 minutes (might be a bit more in a non-fan oven) or until golden brown and a cocktail stick comes out clean.
    5. Allow to cool then decorate.

    i love the recipe but the instructions could be improved it works better if you cream the sugar n butter add the eggs n vanilla mix till smooth mix in dry ingredients then add the milk i also prefer to cut the oreo's in half and place in the center off the filled cupcake cases before baking and for a delicious topping i scrap the cream out of 5 or 6 oreo's mix it with a bit off pre prepare icing made with water add a drop off vanilla and spread on top the crush the oreo parts and sprinkle on top  -  30 Aug 2011


    Used different ingredients. Ran out of vanilla essence so used orange instead, OMG!! Gorgeous!! Chocolate orange oreo cupcakes rocked my wee girl's nursery!  -  21 Jan 2011


    I made these but i didnt add the cocoa powder instead i put some oreos in the food processor too and then i added bigger chunks of oreo cookies into the mixture too .... lovely  -  28 Mar 2011
