Creamy Artichoke Soup

    Really quick to make soup and really tasty, the lemony flavour makes it perfect for summer starters or light lunches and the garlic gives it a bit of a kick! Hope you enjoy as much as I did!

    Serves: 4 

    • 1.5 pint chicken stock (i used an OXO!)
    • 1 can artichoke hearts (water drained)
    • 3 tsp lemon juice
    • 1 clove garlic
    • 80 grams butter
    • 45 grams plain flour
    • 150ml cream

    1. Start by making a roux by melting the butter in a largeish sauspan on med/low heat and slowly adding the flour, whisking constantly until thick.
    2. Add hot chicken stock slowly while still whisking and cook for about 10 mins.
    3. While this is cooking, blend the artickoke, lemon juice, garlic and salt and pepper untill completly smooth.
    4. Add the puree to the stock mix (which should be soup consistancy by now) and stir in the cream. Cook untill heated through.
    5. Garnish with a swirl of cream or a sliver of artichoke. Yummy!

    quite nice.. I had canned artichokes in water so I added the water from the can instead of par of the stock to get more artichoke flavor. I do think a second can would be good.. i prefer a thicker soup  -  26 Feb 2015
