Crab and artichoke spread

About this recipe: This spread is easy and impressive, and can be made ahead of time. Serve with crackers, Ryvita or crunchy vegetables.

Serves: 12 

  • 3 tinned artichoke hearts, quartered
  • 110g (4 oz) crab meat
  • 3 spring onions
  • 1 clove garlic
  • 1 teaspoon lemon juice
  • 400g cream cheese, softened

Method

  1. Place artichoke hearts, crab, spring onions, garlic and lemon juice in a food processor and pulse until chopped fairly small. Add cream cheese and purée until smooth.
  2. Pour dip into a non-metallic bowl, and chill for 1 hour.
