About this recipe: This is my favourite starter of all time I've only ever found it in one restaurant and couldn't find it on the net so I tried to replicate as much as possible A simple yet tasty dipping tomato sauce with a blob of melted mozzerella in the centre and some toasted ciabatta bread on the side to dip. Variations. Why not use your favourite tomato sauce instead of the one below. You could mix up the type of tosted bread used to suit your own personal taste.

Serves: 4 

  • 1kg ripe tomatoes, peeled, deseeded, blitzed
  • 6-8 fresh basil leaves, finely chopped
  • 90ml olive oil
  • 2 cloves garlic, crushed
  • salt and pepper
  • 2 balls of mozzerella cheese
  • 2 ciabatta loaves
  • a drizzle of extra virgin olive oil

Prep:5min  ›  Cook:10min  ›  Ready in:15min 

  1. Heat the oil in a frying pan
  2. Add the garlic and fry on a medium heat for a few minutes
  3. Add tomatoes and simmer, stirring constantly untill excess liquid has evaporated
  4. Add basil and season with salt and pepper to taste
  5. Divide sauce into 4 microwave proof serving dishes
  6. Slice the mozzerella bals in half and place 1 half in each of the 4 serving dished
  7. Place in microwave on full power or until the mozzerella starts to melt
  8. Cut the ciabatta into slices and toast
  9. Lightly drizzle with extra virgin olive oil
  10. Place the sauce dish in the middle of a plate, put the ciabatta slices around the edge and serve
