Delicous Fast - Egg Curry

If you ever dying for a mouthwaterring curry and havent got much ingredients, then will satisfy you and maybe the best curry you've ever tasted!!! You will need A deepish pan (saucepan would be fine) a wooden Spoon Gas Hob

Ingredients

3 Eggs
1 teaspoon of salt (according to taste, adjust if your not a salt person or like more salt, i eckon salt is a must in this dish though)
1 medium to large onion
3 green chilies if desired (curry will be hhhhottt (once again adjust quanity or ommit!)
half teaspoon black pepper
2 garlic gloves (minced, optional)
2 medium tomotoes
small diced up cubes of fresh potatoes (obviously peel them first, ingredient is optional but nice!)
Half a tablespoon of mixed asain hot curry powder(if you aint got any get some from your local indian/pakistani/asain store, or some general supermarkets, get a indian/pakistani brand not a chinese brand will not taste like a authentic curry otherwise,
Adjust quantity of curry powder 1 teaspoon is quite mild, 2 teaspoons is medium to hot 3 teaspoons if your want a super vindaloo type lol!
when buying the curry powder read the instruction it should have ingredients such as cumin, garam masala, hot chillies, paprika etc but dont worry if one aint got all the ingredients in

Preparation method

1. put the pan on the stove, medium heat
2. Add some oil enough to cover the bottom of the pan
3. Chop the potates in to inch size peices and put them on boil seperalty
4. Add small chopped onions once oil is hot
5. Add green chilies
6. once translucent after about 5 mins, add minced garlic
7. keep stiring after a few minutes add the chopped tomotoes (cut them up into very small pieces, try not to add too much of there water, just the skins sortta parts will do, otherwise will go too watery and you will have to simmer the water out longer
8. keep stiring until tomates have cooked (approx 5-10 mins), if necessary add a little more oil at any stage
9. Now add a teaspoon of salt and pepper
10. Add Curry powder, mix well
11. Drain potatoes and add to this pan
12. if excess water goes into the dish , let this cook out abit
13. Now crack open the eggs and add, keep stiring and stiring until there is not watery bit left left in the eggs they are cooked (should only take a few mins at the most)
14. Remove off heat at any stage after you out eggs in, the pan is hot they wuill cook but ensure as the mixture will almost be dry after putting curry powder in they dont stick
15. Done
16. sorry im not the best at explaining recipies but its pretty easy once you got the hang off it yum!
17. you should get it right first time though
18. Eat with fresh roti/chappati/naan bread (not soo good with naan in my view) or regular whitebread i.e hovis
