Veggie pulao rice

    Make your own pulao rice with this easy peasy recipe. The perfect accompaniment to any Indian meal.

    Serves: 4 

    • 2 tbsp oil
    • 1 bay leaf
    • 2 cardamom pods, coarsely crushed
    • 3 whole cloves
    • 4 black peppercorns
    • 1 (2.5cm) cinnamon stick
    • 1 onion, roughly chopped
    • 400g fresh or frozen mixed vegetables, chopped
    • 200g basmati rice
    • 500ml water
    • salt to taste

    1. Heat the oil in a large frying pan or saucepan over medium high heat. Add the spices and onion, and saute till onion is golden brown. Add the chopped vegetables, reduce heat to medium and stir occasionally.
    2. Meanwhile, wash the rice till water runs clean (I wash it seven times). Place the rice and water in a 4 litre microwave safe dish, cover with cling film, then use a knife to make a small hole in the cling film for steam to escape. Microwave for 6 to 8 minutes on High (till the water boils), then another 5 minutes on Medium/Low.
    3. Test the vegetables and add salt to taste. Add the veg to the rice mixture, cover, and microwave for a further 5 minutes on High, then Medium/Low for 12 minutes. Let stand 5 minutes before serving.

    Great recipe and loved that it was so easy to make with ingredients I already had in my cupboard. I used a mix of chopped cauliflower, red pepper, courgette & extra onion. Whole family loved it, a tradition on curry night now! Thank you Manju for this pulao recipe!  -  15 May 2014
