    About this recipe: This is a quick and refreshing no cook vegetarian meal. Great for those hot summer evenings when you don't feel like cooking.

    Serves: 4 

    • 1 (500g) loaf ciabatta
    • 6 fresh basil leaves, chopped
    • 2 tomatoes, sliced
    • 125g fresh mozzarella cheese, sliced
    • 1/8 teaspoon red chilli flakes
    • 125ml balsamic vinegar

    1. Slice the loaf of bread in half lengthways. Layer the basil, tomato slices and mozzarella cheese between the two halves of bread. Cut into four sandwiches.
    2. In a small dish, stir together the balsamic vinegar and red chilli flakes. Use as a dipping sauce.
