Easy coconut ice cream

    Serves: 8 

    • 250ml milk
    • 1(425g) tin cream of coconut, such as Coco Lopez
    • 350ml double cream
    • 100g desiccated coconut (optional)

    Prep:5min  ›  Extra time:55min  ›  Ready in:1hr 

    1. Combine the milk and cream of coconut in the container of a food processor or blender, and mix thoroughly. Stir in cream and desiccated coconut.
    2. Pour into the container of an ice cream maker, and freeze according to the manufacturer's instructions.

    Cook's note

    Do not confuse the cream of coconut used in this recipe with unsweetened coconut milk or cream. The sweetness in this recipe comes from the cream of coconut. Cream of coconut is often used in tropical cocktails and drinks, and is available at specialty shops and Lakeland.

    Great, easy recipe! However you need an ice cream machine to complete. Personally I would halve the amount of desiccated coconut added and ADD sugar to taste as it's not naturally very sweet (even with the cream of coconut) Mostly thumbs up!  -  12 Feb 2013


    i have just made this, this is my first attempt at making home made ice cream, it was so easy to make will be making more flavours, my friends want to try some  -  14 Aug 2014


    This is a very luscious coconut ice cream. The only thing I will do different next time is put the flaked coconut in the blender/processor with the milk and cream of coconut. The flakes made the ice cream a bit chewy in texture. Otherwise, this recipe is very easy and extra creamy. For those reviewers that are saying theirs turned out icy or not sweet, there is a huge difference between cream of coconut and coconut milk. It is like the difference between evaporated milk and sweetened condensed milk. Two brands to look for in cream of coconut are "Coco Lopez" and "Coco Colada".  -  28 May 2006  (Review from Allrecipes US | Canada)
