Spicy Tomato Marinade

    We were having a last minute barbecue and I didn't have time to go to the shops so searched the cupboard and below are the ingredients I found. It was quick and easy to prepare and tasted great and the chicken seemed to stay moist.

    Serves: 4 

    • 250ml passata
    • 1 tablespoon fajita spice mix
    • 1 tablespoon chicken seasoning
    • 2 crushed garlic cloves

    1. Mix all ingredients together. Cut Chicken/Pork/Fish into bite size pieces, put into a plastic bag and pour in marinade. Leave overnight or as long as possible.
    2. When ready to use put on skewers with peppers, mushroom and onion.
